You're Welcome

You'll be thanking me once you make this. Trust me.

I always try and have this on hand in my fridge for a quick little 'healthy' indulgence during nap time. My kids nap time, that is. It is so satisfying in a tasty, filling, and healthy way.

Cookie Dough:

1/2 cup packed almond flour
1/4 cup tapioca starch/flour or arrowroot starch
5 tbsp cold unsalted grass-fed butter (I use Kerrygold)
2-3 tsp coconut palm sugar or honey, to taste
3/4 tsp vanilla
Enjoy Life Chocolate Chips
    (or whatever chocolate pieces you want to add)

Place all ingredients except chocolate in blender and blend until well combined. Stir in chocolate chips. Consume all at once or split with a friend. Or if you are like me you eat a few bites and savor every second and then put the rest in the fridge to snack on throughout the week.

**I have added a splash or two of almond milk to this recipe to help the ingredients blend more easily and it does not alter the taste. Most recently I completely forgot to add the starch and it was just as delicious and even more smooth! I think I'll omit that ingredient from here on out because why use an ingredient when it's not absolutely necessary? Save money and calories! Plus, I haven't researched starches yet like arrowroot and tapioca so I'm not sure of their health benefits or woes.
