I just discovered a new love language. Cooking. And not your average cooking. PALEO cooking. On an average day I don't enjoy cooking and when you cook Paleo there's like 87 steps involved. Want Paleo chocolate chip cookies but you ran out of almond flour but you have almonds on hand? First you gotta blanch them. Then peel them. Then let them dry. Then grind them. But not too long because you want almond FLOUR and not almond BUTTER. Sift the almond flour. Grind the leftover pieces if you desire. NOW you're ready to make your Paleo chocolate chips cookies. Or you could just sell a kidney on the black market so you can afford the finely-ground almond meal/flour at your local natural food's store. I kid. Sorta. We used to buy our Almond Flour at Costco for a great deal but then we moved and now the nearest Costco is a state away. :( It's hard to pay the online price of almond flour when you know how much you COULD be getting it for at Costco. Oh Costco, how I miss you. Though I think one is coming soon to a city near me so YAY!

Enough about almond flour. I've now forgotten what this post was going to be about.

OH! Love language....right...

So I don't always enjoy cooking but I LOVE a good meal. I discovered this new 'love language' of mine (I'm not endorsing the book "The Five Love Languages"...love God, love people, people, K?). When someone ELSE does the Paleo cooking! It really, truly makes me feel all warm inside and totally loved.

I remember being at my mom's this summer who always makes the most amazing breakfasts. I came downstairs and there were bacon and eggs made and fresh fruit on the table and my homemade raspberry jam that I brought. She said, "I even made biscuits!" Initially my heart sank and my stomach leaped. I didn't want to crush her by not eating her biscuits, suspecting they were made with wheat flour and whatnot! Then she opened the oven door and lo and behold, they were PALEO BISCUITS! The recipe came from the Wheat Belly cookbook I got her for Mother's Day (She and I are diabetic so I bought one for the both of us.)! I went from sinking feelings to over the moon excited! And they were so delicious. If I had made them they probably wouldn't have tasted so great. You know how that goes, when someone ELSE does the cooking it always tastes better! But Paleo cooking? Even BETTER! It was a moment I'll never forget. My mom had made me paleo biscuits. And I consumed them under loads of Kerry Gold butter and Homemade Raspberry jam. Is there any other way to enjoy them? Maybe Kerry Gold and Honey. Another scrumptious combination!

Since these pictures were taken, several people have surprised me by preparing food for me according to the Paleo lifestyle and every time it just blows me away with love. It's just so nice to consume a paleo meal that you didn't have to prepare!!! Hence, my new love language. :)

Well....it's 5 years later that I am completing this post and I no longer have the Wheat Belly Cookbook, or else I would type up the recipe, due to having to vacate a moldy house that was claiming my health and ability to function. Books could not come with us as they absorb mycotoxins that can be released into your new surroundings and if given the right humidity will grow and wreak havoc again. Another blog post for another time.

You'll be thanking me once you make this. Trust me.

I always try and have this on hand in my fridge for a quick little 'healthy' indulgence during nap time. My kids nap time, that is. It is so satisfying in a tasty, filling, and healthy way.

Cookie Dough:

1/2 cup packed almond flour
1/4 cup tapioca starch/flour or arrowroot starch
5 tbsp cold unsalted grass-fed butter (I use Kerrygold)
2-3 tsp coconut palm sugar or honey, to taste
3/4 tsp vanilla
Enjoy Life Chocolate Chips
    (or whatever chocolate pieces you want to add)

Place all ingredients except chocolate in blender and blend until well combined. Stir in chocolate chips. Consume all at once or split with a friend. Or if you are like me you eat a few bites and savor every second and then put the rest in the fridge to snack on throughout the week.

**I have added a splash or two of almond milk to this recipe to help the ingredients blend more easily and it does not alter the taste. Most recently I completely forgot to add the starch and it was just as delicious and even more smooth! I think I'll omit that ingredient from here on out because why use an ingredient when it's not absolutely necessary? Save money and calories! Plus, I haven't researched starches yet like arrowroot and tapioca so I'm not sure of their health benefits or woes.
